Ingredients:
6 cups plain flour or bread flour
1 tsp salt
3 tbsp oil
1 tsp white sugar
3 tsp instant dried yeast
600 mls warm water
Filling:
375g ricotta
400g diced bacon
1 onion
250g chopped spinach (frozen spinach)
2 tsp garlic
1/2 tsp ground paprika
Salt and pepper
Instructions:
In a mixing bowl, combine the flour, salt, oil, sugar, yeast and warm water.
Turn dough out onto the bench and knead for 5 minute. Cover and rest for 1 hour to rise.
In the meantime, in a large pan add in a drizzle of oil and add your diced onion, cook until soft and then add in your diced bacon, paprika and cook for a further 3 to 4 minutes. Season to taste.
Combine the ricotta and spinach in a bowl and pop to the side.
Preheat your oven to 180°C and line a baking dish with baking paper.
Roll out the dough into a rectangle on a floured surface.
Spread the ricotta mixture over the dough, then sprinkle the bacon and onion mixture evenly.
Roll the dough tightly into a log and cut into 1 inch slices.
Place the slices in the prepared baking dish, cover and leave to rise for 30 minutes.
Bake for 20-25 minutes until golden brown.
These scrolls are best enjoyed warm, straight from the oven. The combination of salty bacon and creamy cheese is simply irresistible. Serve them for breakfast, as a snack, or an afternoon treat.
