How to Make Delicious Mini Chocolate Chip Muffins for School Lunches

Ingredients:


  • 3 cups (375g) plain flour

  • 3 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2/3 cup (158ml) vegetable oil

  • 1/2 cup (100g) white sugar

  • 1/2 cup (100g) brown sugar

  • 2 large eggs, at room temperature

  • 1/3 cup (80g) Greek yogurt

  • 1 cup (240ml) milk

  • 2 tsp vanilla

  • 1 & 1/2 cups (270g) chocolate chips


Instructions:


  1. Preheat your oven to 200°C.

  2. In a bowl, mix the flour, baking powder, baking soda, and salt.

  3. In another bowl, whisk together the oil, white sugar, brown sugar, eggs, yogurt, milk, and vanilla.

  4. Combine the wet and dry ingredients until just mixed. Be careful not to overmix.

  5. Gently fold in the chocolate chips.

  6. Spoon the batter into mini muffin tins and bake at 200°C for 5 minutes, then reduce the temperature to 170°C and bake for an additional 12 minutes.
