3-4 slices of spring onions
3 tsp sesame oil
A splash of Chinese cooking wine
A splash of soy sauce
500ml beef broth
3 cups water
600g pork dumplings
5 eggs
2 pak choys
2 cucumbers, thinly sliced
2 carrots, thinly sliced
Prepare the Broth: In a large pan, heat the sesame oil over medium heat. Add the minced garlic, ginger, and spring onions. Sauté until fragrant. Add in Chinese cooking wine and soy sauce to taste. Pour in the beef broth and water. Bring to a simmer.
Add the Dumplings: Carefully drop the pork dumplings into the simmering broth. cover the pan. Allow the dumplings to cook for about 8-10 minutes until they float to the surface.
Create egg ribbons: In a jug, whisk together your eggs and then slowly pour in your eggs to your soup to create egg ribbons.
Add Vegetables: Toss in the pak choys. Let them cook for another 2-3 minutes.
Serve and Enjoy: Ladle the hot dumpling soup into bowls. Garnish with Cucumber, carrot, some extra spring onions and a drizzle of sesame oil.
