How to Make a flavourful Sunday Roast Chicken with Delicious Stuffing

  • 60g butter (for under the skin)

For the Stuffing:

  • 2 cups breadcrumbs

  • 5 tbsp (100g) melted butter

  • 1 onion, finely chopped

  • 2 tsp chicken stock

  • 2 cloves of garlic, minced

  • 1 tsp Rosemary

  • 1 tsp Sage

  • 1 tsp Thyme

  • 1 tsp Tarragon

  • Salt and pepper to taste

Instructions:


  • Prepare the Stuffing: In a bowl, combine the breadcrumbs, chopped onion, chicken stock powder, minced garlic, melted butter and a generous amount of fresh herbs. Season the mixture with salt and pepper, and set it aside.

  • Season the Chicken: Preheat your oven to 190°C. Separate the chicken skin from the breast and pop in some butter, massage it in. Rub the chicken with olive oil and season generously with salt, pepper, and a mixture of fresh herbs.

  • Stuff the Chicken: Fill the cavity of the chicken with the prepared stuffing, packing it in tightly.

  • Roast the Chicken: Place the stuffed chicken in a roasting pan and roast in the preheated oven for about 30 minutes and then reduce heat to 160°C and continue to cook for 1 - 1.5 hours, or until the internal temperature reaches 74°C.

  • Serve and Enjoy: Once the chicken is cooked through and golden brown, remove it from the oven and let it rest for a few minutes before carving. Serve the roast chicken with your favorite sides and enjoy a delicious and comforting meal!
