How to Make a Classic Jam and Coconut Slice

Ingredients:

Base -

  • 2 cups (240g) plain flour

  • 1/2 cup (100g) white sugar

  • 250g unsalted butter, softened

  • 1 egg

  • Dash of vanilla

Topping -

  • 2/3 cup strawberry jam

Coconut topping -

  • 2 cups desiccated coconut

  • 1/2 cup caster sugar

  • 2 eggs


Instructions:


  • Preheat your oven to 180°C and line a 20x20cm baking pan with baking paper.

  • In a mixing bowl, combine the flour, sugar, vanilla, egg and melted butter until the mixture resembles fine breadcrumbs.

  • Press the mixture into the bottom of the prepared pan, ensuring it is evenly spread and pressed down firmly.

  • Bake for 15-20 minutes, or until golden. Remove from the oven and let cool slightly.

  • Spread the Strawberry jam over the base.

  • In a separate bowl, mix the desiccated coconut, eggs and sugar together. Sprinkle this mixture evenly over the jam layer.

  • Bake again for 20 minutes or until the coconut turns a golden brown color.

  • Allow the slice to cool in the pan before lifting it out using the parchment paper and cutting it into squares or slices.

  • Serve and enjoy the perfect combination of buttery biscuit base, sweet jam, and crunchy coconut topping. This classic jam and coconut slice will surely become a favorite in your household.
