The Perfect Recipe: Mexican Meatballs


For this sumptuous dish, you will need the following ingredients:


  • 500g pork mince

  • 1 diced onion

  • 1 can lentils

  • 1 egg

  • 5 tsp ground paprika

  • 3 tsp ground cumin

  • 3 tsp dried oregano

  • 1 tsp chilli powder

  • 2 tsp minced garlic

  • 1 tsp brown sugar

  • 1/4 cup bread crumbs

  • Salt and pepper

  • Drizzle of honey (while cooking)


  • In a mixing bowl, combine the pork mince, diced onion, lentils, egg, paprika, cumin, oregano, chilli, minced garlic, brown sugar, bread crumbs, salt, and pepper.

  • Mix the ingredients thoroughly to ensure even distribution of flavours.

  • Shape the mixture into meatballs of your desired size.

  • In a pan, heat some oil and place the meatballs gently.

  • Cook until the meatballs are golden brown and cooked through. Drizzle a little honey over them to caramelise.


Garlicky Goodness: Garlic Couscous


To complement the rich flavors of the Mexican meatballs, we have a delightful side of garlic-infused couscous. Here's what you'll need:


  • 300g couscous

  • 450mls boiling water

  • 2 tbsp oil

  • 1-2 tsp garlic

  • 60g fresh spinach


  • In a large bowl, add your oil and garlic, microwave for 15 seconds.

  • Add into the bowl the spinach, couscous and then pour the boiling water over the top. Give it a stir and cover it for a 10 minutes until the water is absorbed.

  • Fluff the couscous with a fork to separate the grains.


Fresh and Tangy: Salsa on the Side


No Mexican feast is complete without a zesty salsa to brighten up the flavors. Fresh salsa adds a burst of freshness to the meal and balances the richness of the meatballs and couscous.


You will need -

  • 2 cucumbers, diced

  • 2 tomatoes, diced

  • 1 can of corn kernels

  • Half a red onion, finely diced

  • 100g pineapple, diced

  • Squeeze of lime


  • In a pan on high heat, drizzle in some oil and add in your corn and pineapple. cook until golden and toastie.

  • Pour your corn into a bowl and let cool. Add in your cucumber, tomato, onion and a squeeze of lime. Toss your salsa together.
